What you need....
140g butter
200g dark chocolate
200g dark brown sugar
2 tsp vanilla extract
3 eggs
90g plain flour
20g Dutch cocoa
100g walnuts, roughly chopped
Vanilla bean ice cream
Icing sugar, for to dusting
Pink topping for small ladies
Make it Happen....
1. Heat the oven to 160c.
Grease and line the base of a 20cm square cake pan.
2. Place the butter and
chocolate in a microwave proof bowl and place in the microwave on low heat for
3 minuets until melted. Microwaves vary; you may need a little less/more time,
just keep an eye on it.
3. Add the vanilla and sugar into
the mixture, mix well. Beat in the eggs, then the flour and cocoa, mix until smooth.
4. Gently fold in the walnuts
and pour mixture into the lined pan, smoothing the top.
5. Bake for 40 minutes; insert a
skewer in the middle of the brownie, if it comes out clean it’s done. Allow to
cool.
6. Remove from the pan and cut into rounds using a round cutter of choice,
cut each round in half through the middle.
7. Use the same size cutter to cut a perfect slab of ice cream, place it between the brownie rounds
8. Dust with icing sugar to serve and a little drizzle of pink topping or raspberry sauce.
